Greg’s incredible Chà Cá Hanoi – Grilled monk fish with vermicelli noodles, salad and spicy dipping sauce. We ate this famous Hanoian dish on our recent trip to Vietnam, and I was REALLY happy to be eating this again in my kitchen last night 😋😋😋

Hidden gems of Phu Quoc island

This is my first time to Phu Quoc island in the far south of Vietnam. During my four night stay at the Eco-resort Bamboo cottage, I’ve been delighted to discover the many hidden gems of the island. My favourite discoveries have been the following places, which are definitely worth a visit for delicious fresh food or a chance to experience a great location -whether educational, spiritual or for pure relaxation:

– Phu Quoc Bee farm for an organic experience and to discover how important bees are to us.

– The authentic fishing village of Ham Ninh to see fishermen offload their daily catch and to eat fresh locally caught seafood.

– The white sands and turquoise waters of Sao beach. I believe one of the best beaches in Vietnam!

– Ho Quoc Pagoda is located along a spectacular coastal road from Sao Beach. This stunning temple is position high in rock face providing a great vista at sunset.

An Easter break to Vietnam has given me the fantastic opportunity to eat and be inspired by yet more fresh, delicious and healthy food from the motherland.
Our delicious meal this evening at Nhà Hàng Ngon (160 Pasteur, Dist.1 Saigon) was Garlic greens, clay pot fish and hot sour soup with fragrant steam rice. Washed down with an ice chilled Saigon beer – simply delicious.

These are the three dishes I made from the one day gourmet cooking lesson at The Saigon Cooking Class. Thanks to chief Khang who took us shopping for fresh ingredients and showed us the authentic techniques.

The Saigon Cooking Class – My journey begins

The last time I stepped foot in beautiful Vietnam was 7 years ago! Wow, now 7 years later I am mother of two gorgeous boys (who make wonderful kitchen helpers) and I have embarked on the dream of setting up my Vietnamese street food business.
Today I make the long awaited journey to revisit the motherland. I’ve been told much has changed and I’m both nervous and excited.

One thing is for sure, I will be experiencing, and of course eating some of the best and healthiest food in the world! Which obviously means I get to eat LOTS 😋😋😋
On Tuesday, I will start my culinary journey at The Saigon Cooking Class in Ho Chi Minh City http://www.saigoncookingclass.com 
I will be buying fresh ingredients from Ben Thanh market with chief Khang then we will be cooking the following dishes – I cannot wait!
COOKING MENU:

– Fresh spring rolls with prawns, pork, fresh herbs and rice noodles. Saigon Cooking Class’s peanut dipping sauce – Gỏi cuốn.
– Green Mango, “Cang Cua” sala, baby spinach & BBQ chicken with sate – Gỏi gà.
– Fried rice with lotus seeds, prawns, chicken, carrots & green peas folded in a fresh lotus leaf –
Cơm gói lá sen.

Spanish Inspiration

This week we have been lucky enough to experience and taste the Basque regional cuisine in Northern Spain.  From green tomatoes, ultra fresh giant shrimps (which Eddie helped me prepare and cook) to renowned Pintxos bars in San Sebastián serving the finest tapas style snacking food, we have been well fed with food and inspiration!

I will certainly be taking elements of the fresh, colourful and vibrant Vasco flavours to influence Hanoi Ca Phe.
